What my mother taught me

Inspired by meals we ate when we were growing up, these family recipes celebrate nostalgic comfort food filled with memories, to savour and pass on

Chef Rachel Allen draws on her Irish and Icelandic heritage in her latest book, Recipes From My Mother (HarperCollins, £20), which is packed full of comforting home fare that she hopes will encourage you to ‘teach future generations about the appreciation and joy to be had in great food’. Allen says she’s ‘always been fascinated by how the food we eat plays a part in weaving together the fibres that make us who we are’ – drawing on her mother’s own memories of the Scandinavian food she ate as a child, as well as collecting recipes from friends who share their childhood favourites.

The result is a treasure trove of recipes mixing cultures and traditions, with timeless classics, such as Spotted Soda Loaf, Chicken Kiev and Beef Stroganoff, plus recipes Allen first tried on family holidays abroad – Tomato Risotto with Lemon and Basil Mascarpone, Seafood Stew and Beetroot, Dill and Horseradish Gravlax. Time to make some memories of your own…

I remember my mum started making beetroot soup for dinner parties in the 1980s and, back then, I thought the vivid pink concoction was the epitome of chic. I still do, and love that something so pretty is so good for you.

• 900g whole raw beetroot

• 25g butter
