Beetroot falafel pittas

SERVES 4

250g (8¾oz) cooked beetroot, roughly chopped

1 x 400g (14oz) tin of chickpeas, drained and rinsed

4 tbsp plain flour

1 tsp ground cumin

1 tsp ground coriander

1 garlic clove, crushed

2 tbsp fresh coriander, chopped plus extra to serve

calorie controlled cooking spray

1 tbsp sesame seeds

½ a cucumber, trimmed, halved lengthways, seeds removed and sliced
