These nutritious dishes make the perfect midday meals


By The Happy Pear from Recipes for Happiness Makes 4 | Prep & Cook 15 mins


• 250g (8¾oz) tinned sweetcorn

• 400g (14oz) tinned black beans

• 1 fresh red chilli

• 20 cherry tomatoes (different coloured ones, ideally)

• 1 tbsp oil

• 1 tbsp ground cumin

• 1 tsp ground coriander

• juice of 1 lime

• ½ tsp sea salt

• a bunch of fresh coriander

• 1 ripe avocado

• 200g (7oz) vegan cheese

• 4 wholemeal/corn tortillas or wraps


1 Drain the sweetcorn and black beans separately, and rinse thoroughly. Chop the chilli inely, removing the seeds if you want it less spicy. Chop the cherry tomatoes into quarters.
