Meals for one

Simple dishes for when you’re dining solo

Cheese and mushroom omelette by Viva!, veganrecipeclub.org.uk

MAKES 1-2 prep 5 mins | cook 10 mins

For the omelette

• 175g (6oz) fi rm silken tofu

• 2 tbsp nutritional yeast fl akes

• 4 tbsp chickpea (gram) fl our

• 1½ tsp cornfl our or arrowroot

• ¼ tsp turmeric

• large pinch of smoked paprika

• ½ tsp Himalayan black salt

• 6 tbsp aquafaba (the water from a drained tin of chickpeas)

• 1 tbsp olive oil

For the fi lling

• a handful of mushrooms, sliced

• a handful of parsley, chopped

• vegan cheddar cheese, grated

1 Blend all the omelette ingredients and whizz until everything is smooth and there are no lumps. If it looks too thick to pour, add a splash more aquafaba.
