Pasta perfection

Rigatoni frittata


Serves 4 Ready in about 50 minutes

Cook 150g dried rigatoni according to the pack instructions. Drain and set aside. Meanwhile, spray a non-stick, ovenproof frying pan with low-calorie cooking spray and place over a medium heat. Fry 200g chopped back bacon rashers (visible fat removed) and 1 sliced red onion for 4-6 minutes, or until the onion is softened. Add 2 finely chopped garlic cloves, 1 tsp dried red chilli flakes and 1 large coarsely grated courgette and stir-fry for 4-5 minutes. Add the pasta, 200g drained and finely chopped roasted red peppers in brine from a jar and 100g roughly chopped lean ham (visible fat removed) and stir-fry for 1-2 minutes. Lightly beat 6 large eggs with 2 tbsp finely chopped fresh flat-leaf parsley, season and pour over the pasta. Cook over a medium heat for 8-10 minutes, or until the mixture is starting to set at the base. Preheat your grill to medium. Sprinkle 2 level tbsp finely grated fresh Parmesan evenly over the frittata and grill for 4-5 minutes, or until the top is set and the cheese is golden. Leave to stand for 10 minutes. Cut into 4 wedges and serve with a large mixed-leaf salad.
