Get creative with sushi

Make your sushi favour ites with recipes that mimic the colour, taste and text ure using vegetables

Alfalfa sprout roll

Alfalfa sprouts and spring onions combine with nori and spicy mayo to make a roll with taste and texture. By iina | Makes1roll

1⁄3 of an avocado (50g) ¼ of a red bell pepper (30g) 2 spring onions (scallions) 21x19cm (8x7in) nori sheet 30g (about 1 cup) alfalfa sprouts Spicy Mayonnaise (see right), (optional)

1 Cut the avocado and pepper into sticks 5mm (¼in) wide. Cut the spring onions to the same width as the nori sheet.

2 Assemble the futomaki (see below) but spread the alfalfa sprouts (instead of sushi rice) on the nori, using the avocado, pepper, and spring onions as the filling. Apply water along the end of the nori to glue it together. Serve with spicy mayonnaise, if desired.

FUTOMAKI (THICK SUSHI ROLLS)

1 Prepare vinegar water (equal parts water and rice vinegar) in a small bowl.

2 Place a sushi mat flat-side-up on a flat work surface. Place a sheet of nori coarse side-up on top, aligning the nori and the mat.

3 Moisten your hands well with vinegar water. Spread 150g (¾ cup) sushi rice on the nori, leaving a 1cm (3/8in) margin on the near side and a 1.5cm (5/8in) margin on the far side.
