Time to celebrate Easter! April

Make the most of the fresh flavours of spring and create an Easter feast to savour

Berry burst breakfast bars

By The Vegetarian Society (www.vegsoc.org) Makes8small bars | Prep5 mins| Cook30 minsplus cooling | Calories510(per bar)

50g (2oz) vegan margarine

3 tbsp sunflower seeds, roughly chopped

3 tbsp pumpkin seeds, roughly chopped

3 tbsp sesame seeds, roughly chopped

1 ripe banana, mashed

100g (1¼ cups) rolled or jumbo oats

50g (1⁄3 cup) ground flaxseed

50g (½ cup) dried goji berries or cranberries

3 tbsp golden syrup

1 Preheat the oven to 200°C/Gas Mark 6.

2 Melt the margarine in a small pan, then add the remaining ingredients. Mix well.

3 Pack into a small, foil-lined loaf tin (about 18x10cm (7x4in)) and bake for 25-30 minutes, until crispy on top. Leave to cool for at least 10 minutes before removing from the tin. Wait a further 20 minutes before cutting into eight small bars.
