3 ways with... Brussels sprouts
⚫ To make sprout kebabs, in a roasting pan drizzle 300g trimmed Brussels sprouts with 1 tbsp maple syrup, 1 tsp olive oil, and season. roast for 15 minutes at 170ºC/325ºf/Gas mark 3. Cool then wrap each sprout with Parma ham and push onto cocktail sticks. Dust with plain flour then dip into 1 whisked egg, then roll in a mix of 100g grated Parmesan, 200g panko bread crumbs and zest of 1 lemon. Bake in the oven for 8-10 minutes at 190ºC/375ºf/Gas mark 5. serve with crème fraîche or Greek yogurt. serves 6.
