3 ways with... venison
• To make venison burgers, combine 700g minced venison; 1 cooked, diced onion and 1 minced garlic clove, and 1 egg. Add 1 tsp cumin, 1 tsp pepper, pinch of salt and a handful of chopped fresh coriander. Mix together and form into four patties. Fry for 5 minutes on each side, or until cooked through.
• To make scotch eggs, lightly flour 4 cold, boiled eggs. Combine 300g minced venison with ½ finely chopped fried red onion and 2 tsp fresh thyme. season with salt and pepper. shape into four flat ovals. Wrap the meat around the boiled egg. Dip into a beaten egg, and then breadcrumbs. Carefully deep fry each egg for 8-10 minutes until the meat is cooked. remove with a slotted spoon, drain on kitchen towel and leave to cool.
