BLACK VENUS RICE

PUFFED BLACK RICE Heat 3cm sunflower oil in a medium saucepan until it reaches about 180°C (use a digital probe thermometer or test the oil by dropping a few grains of rice in to see if they sizzle and rise to the top). Carefully add a handful of black rice and fry for 20-30 seconds until puffed and crisp. Remove with a slotted spoon and drain on kitchen paper. Serve sprinkled over salads or in granola.
