Start with Bellinis and a sharing platter, then languish over an easy-cook festive feast
Bellini
This cocktail was invented at Harry’s Bar in Venice in the 1930s. It is the perfect cocktail to start the festivities of Christmas morning with some smoked salmon on rye.
* 1 white peach or ready-made peach purée
* chilled champagne or sparkling wine
1 Place your champagne flutes in the freezer for 30 mins to chill. If making your own purée, blend the peach in a blender until smooth.
2 Add a little of the purée to the bottom of the champagne flute and top up with champagne.
