Mexican Black Bean Soup

A hearty and delicious soup — the black beans make it thick and filling, while the toppings add a freshness which help cut through the spice.
For the soup:
• 1 tbsp vegetable oil
• 1 onion, finely chopped
• 2 garlic cloves, puréed
• 1 tsp ground cumin
• 1 tbsp smoked paprika
• 1 red pepper, chopped
• 2 400g (14oz) tin black beans, drained
• 1 400g (14oz) tin chopped tomatoes
• 960ml (4 cups) vegetable stock
For the topping:
• 1 red chilli, finely sliced
• Handful chopped coriander
• Bunch spring onions, finely sliced
• 1 avocado, diced
• 6 cherry tomatoes, quartered
• Handful tortilla chips
1 Add the oil to a saucepan over a medium-high heat, then add the onion, garlic, cumin, paprika and red pepper and cook for 3-4 minutes. Then add one tin of black beans, chopped tomatoes and vegetable stock, and allow to simmer for 15-20 minutes. Use a stick blender to blend the soup until smooth. Then add the remaining black beans to the soup and simmer for another 10 minutes.
2 Top the soup with toppings, and serve.
