Festive glazed ham

Serves 8-10 | Prep 30 mins | Cook 3 hr 10 mins | Calories 459 (per serving

FOR THE HAM

2.5kg (5lb 5oz) ham,

boned and rolled

1 large onion, peeled,

roughly chopped

1 carrot, peeled,

roughly chopped

½ a stick of celery,

roughly chopped

1 bay leaf

2 thyme sprigs

1 parsley stalks

¼ a bulb of garlic,

peeled, roughly chopped

1 tsp black peppercorns

4ltr (7pt) boiling water

FOR GLAZING THE HAM

2 tbsp Dijon mustard

2 tsp mixed spice

1 tsp ground coriander

¼ tsp ground cloves

½ tsp finely ground

black pepper

80g (3oz) clear honey

40g (1½oz) demerara sugar

For the ham

1 Preheat the oven to 150°C/Gas Mark 2.

2 In a large, deep roasting tray, place the ham on top of all the chopped vegetables and herbs.
