For the potato and spinach tortilla

Potato and spinach tortilla

Serves 4 | Prep 10 mins | Cook 35 mins | Calories 561 (per serving)

1kg (2ln 2oz) white potatoes, peeled

4 tbsp olive oil

8 large free-range eggs

100ml (3½floz) whole milk

100g (3½oz) baby spinach, washed

100g (3½oz) Manchego cheese, grated

Salt and freshly ground black pepper

1 Preheat the oven to 200°C/Gas Mark 6.

2 Cut the potatoes into 5mm (¼in) slices and soak in a bowl of water for 10 minutes. Drain well, pat dry, then season with salt and pepper.

3 Heat 2 tbsp oil in a large cast-iron pan set over a moderate heat until hot. Fry half of the potato slices for 6-8 minutes, until starting to colour and puff.

4 Remove from the pan and keep warm under foil. Add another 2 tbsp oil and fry the remaining potato slices in the same manner. Remove from the pan and keep warm under foil.

5 Beat the eggs with the milk and plenty of salt and pepper to taste in a mixing bowl. Add the sliced potatoes and spinach, stirring to combine with the beaten egg.

6 Pour the mixture into the pan and cook for 5 minutes over a low heat. Sprinkle the grated Manchego on top.
