Serves 2 | Prep 00 mins plus proving | Cook 12-15 mins | Calories 1009 (per serving)

FOR THE DOUGH

1 tbsp active dry yeast

300ml (10floz) warm water, 43°C (110ºF)

1½ tbsp caster sugar

300g (10½oz) gluten-free plain flour mix, plus extra for dusting

1 tsp xanthan gum

1 tsp salt

½ tsp gluten-free baking powder

1 tbsp olive oil, plus extra for greasing and drizzling

FOR THE TOPPINGS

175g (6oz) pizza sauce, or tomato passata

175g (6oz) grated mozzarella

5 thick back bacon rashers

2 small free-range egg yolks, as fresh as possible

1 For the dough: Place the yeast in a small bowl and add 180ml (6floz) warm water. Stir briefly and set aside for 5 minutes, stirring in 1 tbsp of the sugar after 2 minutes.
