Start the New Year with a healthy mindset – where better to start than on your plate!

Super crunchy rich roast Thai salad

Serves 4 | Prep 15 mins | Cook none | Calories 373 (per serving)


1 red cabbage, shredded

1 green cabbage, shredded

4-6 spring onions (depending on how much you like the taste!)

1 red pepper, thinly sliced

3 carrots, peeled, grated

125g (4½oz) edamame beans

60g (2oz) roasted peanuts a bunch of coriander, finely sliced

2 tbsp sesame seeds


5 tbsp Meridian Rich

Roast Super Crunchy Peanut Butter juice of 1 lime (or more, to taste)

1 tbsp tamari or coconut aminos

1 tbsp sesame oil

1 tbsp maple syrup or honey

2 tsp minced ginger

¼ tsp chilli flakes water, to thin (I used around 5 tbsp)

1 Start by making your dressing. Whisk together all ingredients, adding water to thin until you reach your desired consistency, then season to taste. Pour into a jar and place in the fridge.

2 Make the salad by stirring together all the ingredients until well combined. Drizzle over the dressing and toss well to combine. Serve immediately.

Welcome to the New Year issue of Gluten-Free Heaven, packed as ever with 101 delicious, seasonal gluten-free recipes. We understand you may have over-indulged over the past few weeks (who hasn't!), and so this issue we are bringing you the best of lighter and healthier meals to kick-off 2020. Many of us choose to make New Year resolutions at the end of December, which, although honourable, are often unattainable. So, this issue, we are going to look at how to start good habits rather than resolutions, making it easier and less regimened – a happier you! We also look to see whether we are getting enough fibre in our diet and, if not, how we can. We go deep under the sun with a host of simple and hearty African recipes – a trend to look out for in 2020, while we also have a lovely section championing root vegetables. We wish you all a happy New Year, good health and look forward to the gluten-free scene getting better and better!
