# Q1: What exactly is gluten?
A: Gluten is a protein which is found in certain grains including wheat, barley and rye. Gluten has a variety of functions in traditional cooking, from gelatinising (thickening) sauces and binding ingredients together in cakes, to creating a stretchy, doughy or aerated structure in traditional bread baking. Gluten can also be found in certain cosmetics and skincare products, which usually doesn’t cause issues or adverse reactions for those with a gluten intolerance (so long as the product is not ingested), but should be bought with caution if you are highly allergic.
