Tandoor cooking is integral to South Asian cuisine, and thanks to immigration, tandoori is a much-loved staple here in the UK, too. It’s a name that conjures up tantalising images of juicy meats cooked over fire, served alongside flatbreads that are cooked in seconds in the same oven. This familiarity means the book has a lot to live up to. And it does, abundantly.
