Switchels and shrubs sound like they belong in a garden centre but are actually old forms of non-alcoholic drinks that are now very on-trend. Flavoured with ginger, herbs and fruit syrups, and drunk diluted with water or soda water, switchels and shrubs have a refreshing tang that comes from the ingredient that gives them their other name: drinking vinegars.
Don’t be put off. Many drinks – from wine to orange juice – depend on acidity. It’s the quality that gives them crispness. In switchels and shrubs, the acidity comes from cider vinegar. Yes, it’s a bit more punchy than the tart tingle of citric acid, but it’s not going to taste like swigging a bottle of malt vinegar.
