Green shakshuka with harissa & crispy shallots
It’s so simple to throw together this comforting one-pan winner for brunch or supper. You can also adapt it with any veg or herbs you have in the back of the fridge, or sprinkle in extra chilli if you like more heat. The secret ingredient here is the preserved lemon, which adds citrussy freshness. If you can’t get hold of it, you can simply use extra lemon zest.
Bombay potato fishcakes
Try a fun twist on standard fishcakes by adding spices that are reminiscent of Bombay potatoes. Crushed poppadums are also an inventive substitute for breadcrumbs, but you can stick to the traditional coating if you prefer. You may want to use up some day-old bread and make your own breadcrumbs by blitzing the slices in a food processor.
Quick mushroom noodle soup
Easy, quick and delicious, this soup is properly comforting, fast food. It’s always good to have noodles in your storecupboard, so you’re always able to rustle up a meal in minutes.
Creamy baked gnocchi with squash & spinach
This oozy gnocchi dish looks and tastes like a lot of love and time has gone into it, so guests will never know you made it in just 30 minutes with the help of a microwave. If you have more time, the squash can be roasted for more flavour.
Banoffee flapjack crumble
Baked bananas become meltingly soft and take on a fruity sweetness. The oats in the topping create a texture reminiscent of flapjack – ahandful of chopped pecans would be a lovely addition, too, if you have them. If you’re a stickler for tradition, serve this with custard, but ice cream or cold single cream would be equally delicious.
