With shop-bought kievs, processed chicken is moulded around the butter, so there’s less chance of it leaking in the oven. The process is a little more difficult at home, but we’ve risen to the challenge, because fresh chicken will always have a better texture and flavour than processed. We guarantee an extra-crisp coating, too, using a surprise ingredient.
