So many kitchen appliances are our best friend for a month or two, then become cumbersome, boring or too high maintenance. The air-fryer, however, is proving to be an ever-popular, long-term companion for many. Why? Because saving money and eating healthily coincide in their compact, countertop form. As we discover in this year’s Good Food Nation Survey, in which over 2,000 nationally representative UK consumers (aged 16+) tell us how they shop, cook and eat today, almost half say they have one; and another 23% are planning to buy one soon. Their energy-efficiency and health benefits are appealing; little wonder over a fifth use an air-fryer every day (you can find out more on page 24). This month, Sam Goldsmith’s adventurous recipes (p80) show that the air-fryer makes it easy to experiment with flavours and textures, too. It’s win-win!
