PREP 10 MIN COOK 35 MIN SERVES 6 GLUTEN FREE DAIRY FREE

½tbsp flavourless oil (eg groundnut)

2 onions, finely sliced

2tsp mustard seeds

1tsp ground turmeric

2tsp ground cumin

3cm piece fresh root ginger, peeled and grated

1–2 long red chillies, deseeded and finely chopped, to taste

400ml can reduced-fat coconut milk

1–2tbsp tamarind paste

1 small aubergine, cut into bite-size pieces

2 carrots, sliced into bite-size rounds 200g green beans, trimmed and cut in half 600g meaty white fish (eg cod, pollock, haddock or coley), cut into bite-size pieces
