TOP OF ELLA’S AGENDA is to make fruit and veg cool. That’s because switching to a plant-based diet helped turn her health around. In 2011, she was diagnosed with postural tachycardia syndrome, which affected her autonomic nervous system and heart rate. Her energy levels and immunity plummeted.

After experimenting with recipes and ditching junk food, however, she turned around her health and her career. She made use of readily available fruit and veg and healthy lavourings such as warm spices and herbs, and discovered how to make incredibly tasty dishes from the most basic of ingredients.
