Sweet potato and black bean shepherd’s pie

I made this at home for my brother and his wife recently and they absolutely loved it, so I’ve been making it lots ever since. The beans are sautéed with red onion, garlic, maple syrup, coriander, lime juice, spring onions, mushrooms and tomatoes, until they’re soft and full of flavour, before being baked under a layer of sweet potato mash. It’s a hearty supper that freezes brilliantly – so much so that we've included it in our frozen ready meal line-up.

DAIRY FREE VEGAN

3 –4 sweet potatoes (about 600g), peeled and cut into small cubes

2tsp olive oil, plus extra to serve (optional)

1 large red onion, finely diced

2 garlic cloves, peeled and finely diced
