The nation’s favourite meat brings plenty to the table nutritionally: lean, quality protein and a good supply of B vitamins. Just remember to remove the skin before cooking to reduce saturated fat
chicken&chickpea salad

CHICKEN & CHICKPEA SALAD

PREP10 MINSERVES

✔GLUTEN FREE

2 carrots, grated or julienned

½ cucumber, cut into chunks

100g green beans, halved, blanched and cooled

400g can chickpeas in water, drained

150g cooked skinless chicken breast, shredded

50g rocket

2tbsp grated parmesan

For the dressing

4tbsp low-fat natural yogurt

Juice 1 orange

2tsp wholegrain mustard

1tsp extra-virgin olive oil

1 Combine the dressing ingredients with a pinch of ground black pepper in a small bowl or jug, then pour into 2 large jars or lunchboxes.

2 Layer the salad ingredients in the jars or lunchboxes in the order listed, then seal and chill for up to 24 hr.

3 To eat, tip the salads into serving bowls and mix well to coat everything in the dressing.

RED PEPPER VEGGIE

Make the salad vegetarian by replacing the chicken with 1 roasted red pepper cut into strips, and use a mature cheese suitable for vegetarians instead of parmesan.

Spice up the dressing by replacing the mustard and orange juice with 1tsp harissa paste and the juice of 1 lime.
