Stress buster
Olive oil contains a compound called oleocanthal which has the same anti-inflammatory effect as ibuprofen. Use it unheated as a salad dressing to preserve the delicate healthy fats
QUINOA TABBOULEH
Fresh and yummy, this is great with fresh fish or lean protein; if you’re veggie, use the pistachios to make it more filling.
Serves 4
200g quinoa, rinsed
4 beef tomatoes, chopped
1 red onion, chopped
1 cucumber, chopped
1 avocado, chopped
A handful of parsley, chopped
A handful of coriander, chopped
A handful of mint, chopped
Juice of 1 lemon
2 tbsp olive oil
1 tbsp apple cider vinegar
Sea salt
Freshly ground black pepper
A handful of pistachios, optional
1 Rinse quinoa well, put it in a pan over a medium heat with double the amount of boiling water. Cook for about 10 mins, until the grain unwraps itself, but still has a slight crunch. Drain and rinse well in cold water. Set aside to cool.
2 Tip cooled quinoa into a salad bowl with all the vegetables and herbs. Drizzle over lemon juice, olive oil and cider vinegar. Season and toss to mix it all up.
3 To give your salad an extra crunch, toast the pistachios for a few mins in the oven and sprinkle them over the top.
