Walnut and black bean wraps

INGREDIENTS
✲ 1 x 400g tin black beans, drained and rinsed ✲ 100g walnut halves ✲ 100g sun-dried tomatoes ✲ ½ tsp ground cumin Q ½ tsp paprika ✲ ¼ tsp cayenne pepper, optional
TO SERVE
✲ 2 whole wheat tortillas ✲ ½ head romaine lettuce, shredded ✲ ½ avocado, peeled and sliced ✲ Juice of 1 lime ✲ Sea salt and freshly ground black pepper
1 Blitz the black beans, walnuts, sun-dried tomatoes and spices in a food processor until the walnuts look like large crumbs. If you don't have access to a food processor, crush the walnuts in a sandwich bag using a rolling pin, dice the sun-dried tomatoes then combine with a fork.
2 To assemble, warm the tortillas as instructed, then simply spread a spoon or two of the walnut and black bean mix around the tortilla. Top with slices of avocado and a generous handful of shredded romaine lettuce, then finish with a squeeze of lime juice and a sprinkle of salt and pepper.
