SERVES 12
725g (1lb 6oz) self-raising flour
175g (6oz) butter or margarine
100g (31/2oz) honey
125g (41/2oz) apple, grated
1 free-range egg
150ml (5fl oz) milk
1Preheat the oven to 180°C/ Gas Mark 4.
2Place the flour and margarine into a mixer and combine until you have a fine breadcrumb consistency. Alternatively, rub the flour and margarine together with your fingers until you have achieved the same result.
3Add 75g (23/4oz) of the honey and all of the grated apple.
4Next, add the egg and two-thirds of the milk, and mix into a dough, adding more of the milk if needed.
5Remove the dough from the bowl and place onto a well-floured surface, then roll out and cut with a 7cm (23/4in) pastry cutter.
6Place on a tray, brush the tops with the remaining milk and place in the oven for 10-15 minutes.
7Remove from the oven and, while they're still warm, brush the tops with the remaining honey to give a nice shine.
