“This is a lovely and easy recipe to make. Pieces of fresh strawberries in the cupcakes give them little pockets of flavour, topped with a butter icing full of flecks of freezedried strawberries that pack a real flavour punch. I love the ease of melting the butter, removing the need to cream the sugar, butter and eggs together, plus using buttermilk also keeps the cupcakes moist.
