The ultimate Christmas cake

Over the years I have baked thousands Christmas cakes and tweaked the recipe to perfection. I used to supply Fortnum and Mason and Harvey Nichols with this recipe in various forms, from miniature gifting cakes through to larger celebration cakes. The smell that fills the house as you bake so delicious – it really gets me in the Christmas mood. It’s also easy to make as no pre-soaking of the fruit is required. The texture is to die for; it’s a cross between a pudding and a cake and it goes very well served alongside a cheeseboard, because it is so soft and richly fruited – it has a chutney-like quality.
I baked this on This Morning and decorated the fruit cake to look like a wedge of stilton and we placed it hidden within a cheeseboard to surprise Phil and Holly. It was such fun and they had no idea it was cake! You can check it out online to see their reaction.
