Tostadas are eaten out of hand, like little pizzas or open-faced sandwiches. Guests assemble their own tostada creations, so it’s possible to accommodate any dietary restrictions.

The big spread

Set food out in order of assembly: crisp tortillas, black bean spread (to hold on the works), chicken and/or shrimp (double recipe if serving only one option), then toppings.

Your tostadas start with the tortilla. You’ll need about two 6-inch corn tortillas per person. You can find fried tostada shells in the Mexican section of many grocery stores, or buy soft tortillas and cook them yourself in one of three ways. (Word to the wise: don’t multitask while cooking these—they will burn if you don’t pay attention.)
