Easy Chickpea Curry

This healthy make-ahead recipe is one of our family favourites. It freezes well, warms up quickly, and tastes even better the next day. Serve it with rice or, easier yet, tortillas or pita for an effortless, economical meal.—Catherine Jheon

2 tbsp vegetable oil

2 medium onions, peeled and chopped

Salt and pepper, to taste

2 tsp ground cumin

1 tsp ground coriander

1 tsp ground turmeric

½-1 tsp ground chile pepper, to taste

1 can (540 ml/19 oz) tomatoes, chopped, or 2 large tomatoes, chopped

1 cup water, or chicken or vegetable broth (you can add up to ½ cup extra if you like more sauce)

2 cloves garlic, chopped

2 tsp peeled, chopped ginger

1 medium potato diced into small cubes

2 cans (540 ml/19 oz) chickpeas, rinsed and drained

Fresh cilantro, chopped (optional) Green onions, chopped (optional) Yogurt

1. Heat oil in a large skillet over medium heat. Add onions, a generous pinch of salt and pepper, and stir occasionally until onions are browned on the edges, 5-10 minutes.

2. Add cumin, coriander, turmeric, and chile pepper. Then add tomatoes and water or broth. Add garlic, ginger, and potato. Add chickpeas. Bring to a boil, then turn heat to low, cover, and simmer for 25 minutes or until potato cubes are cooked, stirring occasionally.
