Thunder rolls in the distance, lights flicker, and…power’s out! A call to your provider tells you there’s a tree on the line. Estimated time for repair? Thirty-six hours. This happened to us last year at the cottage so often that we are at the point (almost) where we no longer meet the situation with trepidation. It ’s all part of the cottage adventure! The key, of course, is to be prepared. Plan ahead with these ready-for-anything meals, then fire up the grill, raid the pantry, and be creative, using up what you have on hand. Here’s how to keep the gang well-fed when the lights go out.


Grilled Halloumi

Think of this as an update to the alwayspopular baked brie. It’s an easy-to-make snack that’s a bit of a surprise. Grilled halloumi has a unique, almost “bouncy” texture and a pleasantly mild flavour that is elevated by za’atar, a Middle Eastern seasoning blend of dried thyme, toasted sesame seeds, and salt that you can keep in your pantry. Serve it as a snack or as lunch with marinated or fresh vegetables and warm pita bread.

8 oz halloumi cheese, sliced in 1/2˝ slices

1 tbsp extra-virgin olive oil

1 tsp za’atar or chopped fresh thyme

Freshly ground pepper

Pita bread

1. Arrange halloumi cheese slices on a well-oiled grill over medium-high heat. Grill for 1–2 minutes or until golden and just beginning to soften. Turn slices over, and grill until outside is golden and nicely marked, and inside is warm and soft, 1–2 minutes more.

2. Remove cheese to a platter, drizzle with olive oil, and sprinkle with za’atar or thyme and freshly ground pepper.

3. Serve with warm pita bread. serves 4 as a snack.


Grill + fuel for pretty much all your cooking needs. If you have the latest propane outdoor grill with a side burner, you’re all set to make meals just as in your kitchen. (We cook on a charcoal grill at the lake, so we boil water on a camp stove or a small hot plate that is butane-powered.)
