Sometimes you read through recipes and think, “That’s my kind of food”. These dishes by the late food writer Valli Little are the definition of crowd-pleasing, from an oven-baked satay to a slow-cooked beef casserole and a zingy coconut ice cream with caramelised mango… Yes, please!

A tribute to Valli… By editor Karen Barnes

These recipes are from the last book by food writer and food stylist Valli Little. For anyone who doesn’t know the name, Valli was the legend behind the recipes in our sister magazine delicious. Australia, and she had many bestselling books to her name. Tragically, two years ago, she fell ill with cancer. We all thought she was on the road to recovery because she’d been to visit and seemed so much better. She was fiercely private about her battles with ill health. So it was a shock when we received the news of her death, in the latter half of 2017, after a short and sudden recurrence of the illness.

Valli was originally from south London and, only a few months before, I’d been talking to her about coming back to England to work with us for a while because she’d told me she had a yearning to come home for a few months.

As a team, we worked closely with Valli over the years, publishing her recipes in UK delicious. and discussing things with her as we retested them with British ingredients. We’d talk about how ingredients such as flour can vary from country to country – not to mention hemisphere to hemisphere. She cared about every detail.

The recipes on these pages, from the book published only a few months before she died, are a tribute to Valli. They demonstrate a creativity and freedom you rarely see – yet there’s simplicity at their heart. That, to me, is the essence of a great recipe and it’s one of the things I’ll miss most about Valli – along with her indomitable spirit. Choosing which recipes to publish was a challenge because they’re all so good…
