For me, ingredients are the star of the show and a classic dish is one that shows them off to their best advantage. I like maximum flavour and minimum fuss, where simplicity is the key. Embedded in our own national cuisine are dishes that have been handed down through the generations. This – one of the original one-pot meals – is full of melt-in-the-mouth lamb and tender vegetables all in a rich, flavoursome gravy topped with crisp potatoes.
