3 SOURDOUGH FACTS…
1 One teaspoon of sourdough starter has millions of yeast cells and billions of lactobacilli, an acidic form of bacteria that makes the bread taste sour.
2 Using a sourdough starter is the oldest way of leavening a loaf of bread – brewer’s yeast and bicarb were first used in the mid-19th century.
3 When buying bread, always read the label; some sourdough makers use artificial additives and added yeast rather than an actual live starter.
