Michel Roux Jr, a TV regular who holds two Michelin stars at London’s famous Le Gavroche restaurant, is one of the most revered chefs in the country. His kitchen may set the standards by which other restaurants are judged, but that doesn’t mean all his dishes are complex and tricky to master – in fact, he loves cooking simpler dishes at home. This quick-to-put-together fish recipe is a case in point

MEET MICHELÉ He’s the son of Albert Roux and nephew of Michel Roux Sr – the famed Roux Brothers – as well as being the long-standing chef of two- Michelin-starred Le Gavroche restaurant in Mayfair, which celebrated its 50th anniversary last year (some of you joined us for a reader event there). Michel is known to TV viewers of MasterChef: The Professionals, Saturday Kitchen and Kitchen Impossible with Michel Roux Jr, as well as being the author of several cookbooks. In his spare time (how does he have any of that, we wonder?) he’s a keen marathon runner.

As summer wanes and turns to autumn, the September issue of delicious. gets cosy with favourite curries and a classic blackberry and apple crumble. Mellow fruitfulness indeed! Michel Roux Jr shows what he rustles up at home, Angela Hartnett puts on a feast for sharing and Gill Meller cooks a lobster spaghetti. Plus we’ve got Zoe Adjonyoh’s Ghanaian menu, a simple guide to pickling and fermenting (everyone’s doing it), a spectacular salted peanut mousse and chocolate meringue stack and much more. Gorgeous.
