CONVENIENTLY sold as portions with no fiddly prep required, salmon fillets are the perfect speedy supper for time-pressed cooks. The natural oils (they’re a good source of omega-3 fatty acids, which help keep our hearts healthy), make the fish moist, so it’s suitable for many cooking methods, including poaching, steaming, baking, grilling and pan-frying, with no need to add cooking fat. You can also buy ready cooked fillets, which are great for salads. Bear in mind that farmed salmon tends to be higher in calories and fat than wild salmon (farmed salmon don’t have to swim as far or as vigorously as fish in the wild). Whichever you buy, zingy flavours, such as ginger, chilli, lime and mint, are a perfect match.
