Be sure to eat your cucumber skins! They’re packed with insoluble fibre, which helps to speed up the digestive process.


This is a potato salad with substance, and it’ll get you stoked for a picnic with pals. It’s got chunks of all things Greek and is a welcome change from the typical variation. You could even swap rotini or macaroni for the potatoes for a big fat Greek pasta salad.

Serves 6-8

Prep: 45 mins (plus marinating time for 3 hours or overnight)

Cooking: 45 mins

For The Creamy Cucumber (prep ahead)

½ cucumber

227g vegan mayonnaise

2 tbsp lemon juice

2 garlic cloves

2 tsp apple cider vinegar

1 tsp finely chopped fresh dill

¼ tsp sea salt

¼ tsp ground pepper

1 Grate the cucumber. Place in a sieve and squeeze out excess water.

2 Place all the ingredients in a highpowered blender, then blend until smooth. 3 Store in the fridge for up to 10 days. If the cucumber water starts to separate, shake the dressing to combine again.

For the tofu feta

1 x 400g block firm or extra-firm tofu
