There’s a secret to turning out golden cubes and slices that you may not know about: tofu comes packaged in water to keep it fresh, and you need to get this water out before you start cooking. Luckily, Susanna and Adam at Tofuture have designed a tofu press which gradually removes the water from shop-bought tofu to give it a fantastic texture and allows it to absorb flavours.
