BOWLS OF goodness

You don’t need meat to sustain your energy – try these proteinpacked, plant-based meals instead

The bowl food trend looks like it’s here to stay, whether that’s poké, spoonable smoothies, bliss bowls or bibimbap. And with good reason: it encourages portion control, and nutritionally balanced meals that combine carbs, fats and protein, plus plenty of your five-a-day. The plant-based protein movement has also gained momentum; never has it been easier to meet your protein needs with no meat or dairy. These recipes, from new book Bowl Food, combine both trends.

Using peas, which contain 13 per cent protein, instead of chickpeas for falafel means they’re easier to digest. If you want to start your kids on eating green things, or add more into your own diet, these are great, full of flavour and good-for-you greens! The key to an authentic tabbouleh is to chop the ingredients (particularly the parsley) as finely as possible.
