Chill out at Christmas

Deliciously cool iced Italian dolci for your Christmas table from Lisa Valmorbida

This version is based on one of the concepts I was taught at the Gelato University in Bologna, but it also reminds me of home because my mum has always made tiramisù. What makes my mum’s tiramisù so good is that she soaks the savoiardi biscuits in coffee and sweet sherry.

PREPARATION 30 minutes

CHILLING 3 hours, combined

FOR THE MASCARPONE GELATO

• 120g caster sugar

• 50g dextrose

• 15g skimmed milk powder

• 3g carob bean powder

• 485g milk

• 125ml single cream

• 25g filtered water
