Lettuce is not just a green leafy ball – it comes in an array of colours, forms and the older varieties have some interesting names, as heritage veg enthusiast Rob Smith explains


One of the most common vegetables, especially in the summer, has to be lettuce. In the supermarket we can buy an array of lettuce products, from fresh ‘cut-and-come-again’ tray lettuce to a cellophane wrapped iceberg, and many more in between. In our health conscious times we are steadily eating kilos more lettuce, year after year.

We know lettuce has been around for a while, both the Egyptians and Romans were fans, but not always for the reasons you would think.
