Legumes a Source of Protein and Joy

One of the foods which undoubtedly helps vegetarians and vegans substitute meat is legumes. Not only do they contain protein, but also saccharides, fiber, vitamins (especially B-group ones) and a variety of minerals, primarily phosphorus, magnesium, iron and calcium. In short, they are treasure troves of everything we need, and thanks to their variety and numerous possible combinations we can find them delicious!

Apart from the fact that legumes are nutritionally important, they are also suitable for diabetics – since legumes have a low glycemic index, they decrease blood sugar levels. They shouldn’t be eaten raw, as they have a quite a tough skin which is difficult to digest and they are quite hard – apart from, perhaps, fresh peas from a pod. And if you want to avoid undesirable gaseousness, it is good to soak them a day before and strain them.
