Into the Wild Bilberies
FORAGING FOR WILD BILBERRIES
At this time of year, we finally have access to an amazing wild ingredient: bilberries.
On the peaks and edges of hills and nestled amongst the heather, we see a thriving population of dark green shrubs; these small shrubs are home to the most incredible and delightful fruit – wild blueberries. They go by many names across the UK from bilberries to blaeberries, whortleberries and many more.
The flavour will quite literally blow you away! Stemming from something called flavonoids – which produce the blue colour in both in commercial blueberries and wild ones – the flavour of wild blueberries is beautifully intense. When you slice open a commercial blueberry, you will see they’re clear in colour through the centre; whereas if you slice a wild blueberry it’s dark blue and packed with flavour. In my opinion they are at least 10 times more flavoursome that the commercial variety.
