An Italian Feast

Angélique Roussel veganises a selection of her favourite Italian dishes that the whole family will adore


Parmigiana is a gratin dish from southern Italy comprising aubergines, tomato sauce and cheese. To make the dish more sophisticated and wholesome, there’s a crumble topping, which also adds crunch.
