Gluten-free baking with extra veg from Emma Carter at the College of Naturopathic Medicine

Tomato and pesto loaf

This is a quick sun-dried tomato and pesto loaf loaded with flavour. It uses just a simple to prepare batter and requires no yeast or resting time.

6 tbsp warm water 6 sun-dried tomatoes, roughly chopped 2 tbsp ground flaxseed 170g (6oz) gluten-free oat flour 140g (5oz) self-raising gluten-free flour mix or regular self-raising flour, if tolerated 1 tsp gluten-free baking powder 1 tbsp coconut or other dairy-free yoghurt 1 tsp apple cider vinegar 175ml (6floz) almond milk ½ tbsp coconut sugar a generous pinch of sea salt a generous pinch of black pepper


25g (1oz) fresh basil leaves and tender stalks 1 garlic clove, peeled 1 tsp grated lemon zest 1 tbsp pine nuts 1 tbsp nutritional yeast 4 tbsp olive oil 2 tsp lemon juice
