Sweet and savoury recipes that are an absolute treat rather than trick

Cinnamon and blueberry pancakes

By Violife ( Serves2| Prep10 mins| Cook15 mins| Calories344(per serving)

200g (2 cups) blueberries

1 tbsp icing (confectioner’s) sugar a squeeze of lemon juice

150g (1 cup) plain flour

2 tbsp caster sugar

2 tsp baking powder a pinch of salt a dash of vanilla extract

150ml (2⁄3 cup) unsweetened almond milk

1 tsp cinnamon

½ tbsp vegetable oil

200g (12⁄3 cups) Violife Original Creamy

1 Tip the berries into a small pan with the icing sugar and lemon juice. Cook for 5-10 minutes. Cover to keep warm.

2 Tip the flour, caster sugar, baking powder and salt into a bowl, and mix to combine. Pour in the vanilla, cinnamon and almond milk, and whisk to combine.

3 Heat a non-stick frying pan over a medium heat with 2 tsp oil. Add a heaped tbsp of batter to the pan and cook the pancakes in batches for 3-4 minutes on each side. Keep warm in a low oven while you cook the rest.

4 Serve the pancakes with the compote and Violife Creamy.
