Satisfy that creamy craving with these divine vegan ice cream recipes

It’s finally summer and that means ice cream! Soaring temperatures and cones filled with creamy, vegan bliss are a match made in heaven. Alas, for many of us, the ice cream truck doesn’t fill our hearts with child-like joy but disappointment, with vegan options often limited to a watery, orange ice lolly. But times are changing — everything can be made vegan and ice cream is no exception. We have recipes to tantalise your taste buds and cool you down as you bask in the, let’s face it, incredibly short-lived sunshine. So don your sun lotion and prepare for an ice cream revolution!


• 1200 ml (3 tins) of coconut milk

• 200g (1 cup) frozen pineapple

• 125g (1 cup) of icing sugar

• 2 tsp vanilla extract

1 Place 2 tins of coconut milk in the fridge over night.

2 Add the third tin of coconut milk to a small saucepan together with the confectioners sugar and stir in. Heat on medium temperature and let it simmer for about 30 minutes until the liquid has reduced and the mixture has become clear. Add it to a jar and leave it in the fridge to cool down.

3 Blend 1 cup of frozen pineapple in a high-performance blender. Make sure to stop the blender every 10 seconds to scrape the pineapple down.

We also have an inspirational interview with What the Health co-director Kip Andersen. Kip was fantastic to interview — very relaxed, honest and chatty. We spoke to him about his new film and what he has coming up in the future. If you haven’t seen What the Health yet, it is definitely worth putting some time aside to do so. Inside you will find features on pearl farming, the environmental value of electric vehicles and an overview of the vital, but undervalued, vitamin B12. We also have a focus on dog adoption this month. Shocking numbers of dogs are being abandoned at rehoming centres and we explore how adopting a companion can change their life, and yours, for the better. As we enter the last month of the summer, we need to embrace this wonderful season wholeheartedly. In this issue we are showing you how easy it is to make your own vegan ice cream and frozen yoghurt. Your neighbours will have serious food envy when they see you cooling off with our recipe for home-made vegan pistachio ice cream! We also have introduced a new feature this month.
